We got this recipe along with our biweekly box from Farm Fresh to You. It's like a refined version of a split-pea and ham soup. ingredients- 1 t. olive oil
- 1 med. onion, finely chopped
- 3 slices of smoked bacon, chopped into 1/2 inch pieces
- 2 c. chicken stock
- 1 med. potato, finely chopped
- 50 g. pea shoots
instructions- In a medium saucepan, saute the onion over medium-high heat in the olive oil until soft (about 5 minutes).
- Add the bacon and cook until it begins to brown (about 5 minutes).
- Add chicken stock and potato, and bring to a boil over high heat. Boil for 10 minutes.
- Remove from heat. Blend (either in a blender or in the pot with a hand blender) until smooth.
- Add the pea shoots. Blend until smooth.
- Heat in the saucepan and serve.
