Pea Shoot & Bacon Soup

We got this recipe along with our biweekly box from Farm Fresh to You. It's like a refined version of a split-pea and ham soup.


  • 1 t. olive oil
  • 1 med. onion, finely chopped
  • 3 slices of smoked bacon, chopped into 1/2 inch pieces
  • 2 c. chicken stock
  • 1 med. potato, finely chopped
  • 50 g. pea shoots


  1. In a medium saucepan, saute the onion over medium-high heat in the olive oil until soft (about 5 minutes).
  2. Add the bacon and cook until it begins to brown (about 5 minutes).
  3. Add chicken stock and potato, and bring to a boil over high heat. Boil for 10 minutes.
  4. Remove from heat. Blend (either in a blender or in the pot with a hand blender) until smooth.
  5. Add the pea shoots. Blend until smooth.
  6. Heat in the saucepan and serve.
