Kathy's Casserole

This recipe is named after some old friend of one of my sisters. Kathy didn't make up this recipe. She's just the one who gave it to my family.

Trust me, this is not high-end cuisine. It's just a dish I used to love when I was a kid.

  • 1 to 1-1/2 lb. ground beef
  • 1/4 c. chopped onion
  • 1 can tomato soup
  • 1-1/2 c. water
  • 4 oz. (1/3 c.) dry egg noodles
  • 2-1/2 c. creamed corn
  • 1/4 c. olives, sliced
  • 1 c. grated cheddar

  1. Preheat oven to 350 degrees.
  2. Brown meat.
  3. Add onions, tomato soup, water, and noodles. Cook until noodles are tender. Season.
  4. Add corn, olives, and half of the cheese.
  5. Stir, transfer to a casserole dish, and cover with remaining cheese.
  6. Bake 35-45 minutes.
